I thrive off of a raw vegan diet and I love sharing my favorite recipes from my Mermaid Menu. These are quick and easy to make and bring with you to the beach or pool. All you need is some simple ingredients and a blender! Check out more delicious recipes on Sunkissedvegan.com.

Pink Paradise

1 Cup frozen dragon-fruit(Pitaya)

1 Cup fresh or frozen pineapple

2 Bananas

2 Cups water or coconut water

Tropical Sunrise

2-3 cups fresh or frozen mango

2 banana

2-3 cups coconut water

Summer Sipper

4 cups chopped watermelon

2 cups fresh or frozen pineapple

2 tbsp fresh lime juice

Chocolate Pumpkin Seed Energy Bites
If you’ve never made your own energy bites, then you’re missing out! Not only are they delicious, but also super easy to make and the perfect snack to grab on the go! I was inspired by Gimme Some Oven’s no-bake energy balls, and decided to make my own variation for fall. 
1 cup dry oats
1/2 cup peanut butter (or other nut butter of your choice)
1/2 cup ground flax seed
1/2 cup chocolate chips
1/3 cup pumpkin seeds 
1/3 cup agave nectar (or honey)
1 tablespoon chia seeds
1 tablespoon cinnamon
1 teaspoon vanilla extract
Combine all ingredients in a large bowl and mix evenly. Let the mixture chill in the fridge for about 30 minutes. Once the “dough” is ready, you can roll the mixture into balls of whatever size you’d like (I like mine about the size of a spoon scoop). Roll out the rest of your dough and store bites in the fridge until they are ready to be enjoyed!

I’ve created a super simple detox drink and the perfect, light fall salad!

Green Juice:
1 small pineapple (or half of a regular size)
1 cucumber
1-2inch knob of ginger (depending on your spice preference)

Wash and prep your fruits and veggies. Don’t go crazy over the pineapple skin/pines, as long as you get most of the skin off the pines will just go with the rest of the fibers!

Starting with the ginger, juice all the ingredients and drink immediately!

Fall Salad:
4 cups mixed greens
1 Granny Smith Apple, julienned
1/2 cup walnuts, chopped

Wash and prep your greens. Set walnuts and apples aside.

Apple Cider Vinaigrette:
1/4 cup Braggs apple cider vinaigrette
1/2 cup extra virgin olive oil
1 tablespoon grade A maple syrup (honey if not vegan)
Sprinkle of salt and pepper

Throw everything into a small mason jar and shake her up! There will be plenty extra.

Toss the greens with your desired amount of dressing. Top with walnuts and apples! (If not vegan, blue cheese would be the perfect addition!)
